A versatile veggie, eggplant could be mixed with other foods (ex zucchini, pasta, cheese and brow rice) or consumed on its own: pureed, baked, steamed, fried. Steamed eggplant becomes mushy, so it makes a good finger meal. Simply steam one inch parts until soft, or cook in quarters until tender, before pureeing. Make it gourmet by cutting slits into the skin and mixing with garlic before baking; next, add chicken or veggie stock and mash.

Quarter eggplant, brush with oil, sprinkle basil, bake right until tender and add cheese.

Eggplant Saute

- olive oil

- 1/2 cup onions, sliced

- 1/2 teaspoon garlic powder

- ¼ tsp basil

- ¼ tsp pepper

Peel and dice eggplant, saute onions in oil, include spices.
